Still not sure what Mugging is? Watch this brief video as they make a Chocolate Brownie Cake in a mug!
My children and I made this recipe together, and it was fantastic. We liked it both with and without the added chocolate chips. We also tried the Old-Fashioned Yellow Cake and Cobbler, Country Style Cornbread, Quiche in a Cup, and the No-Pan Pancake. We were extremely pleased with them all and loved eating them as they came or with extra ingredients. (There are suggestions for different variations on every box.)
My personal favorite was the Quiche in a Cup. Here’s how I made it using the basic directions:
Now, here’s how I spruced up the recipe: I cooked up some bacon and dropped bacon bits into the mix before baking. When the quiche was done, I sliced it into three sections and placed each slice between an English muffin. Voila! We had three egg sandwiches! Another time, I placed a quiche slice on one side of an English muffin and dribbled Hollandaise sauce on top for a decadent Eggs Benedict! It was perfect. This was a huge hit with my kids for a fun breakfast dish.
Each Shirley J Mugging box contains five envelopes for five servings. But some of them are such a nice portion that you can split them into two or three servings (like I did with the Quiche in a Cup).
